Dal Baati Churma (Vegetarian Classic)

A royal dish of Rajasthan, it consists of baked dough balls made from wheat flour termed baati, served with spiced lentils termed dal and a sweet dessert called churma. The combination of different textures and flavors offers a crunchy treat with a creamy mixture and a sweet finish. It is strongly recommended to add a dollop of ghee for flavour.

 

Gatte Ki Sabzi

Soft gram flour dumplings termed gatte are cooked in a spicy milk / yogurt-based gravy. It is also a good substitute for boiled / steamed rice or roti as it is high in protein and provides a tangy and deeply gratifying taste.

 

Ker Sangri

A signature dish of Rajasthan, it is a dried berry termed ker which is combined with dried beans termed sangri, cooked with spices and yogurt. Ker Sangri is tangy and earthy!


Bajra Roti with Lehsun Chutney

This holiday delight combines traditional millet flatbread (bajra roti) with a spicy chutney made of garlic. A treat when served together convey to to customer there are a  nutritious and flavorful combination that is a go-to across every Rajasthani household. 


Pyaaz Kachori & Mirchi Bada (Street Food Delights)

Deep-fried pastries stuffed with either spiced onion or green chilies filled potato. Spicy, crispy goodness, perfect to enjoy alongside a cup of masala chai.



Laapsi & Ghevar (Vegetarian Sweets) 

For dessert, you can also try Laapsi (a sweet broken wheat pudding) or Ghevar (a disc-shaped sweet soaked in sugar syrup). Both are a melt-in-your-mouth treat that can be reserved for special occasions that traditionally complete a Rajasthani meal.
