Navratri ke dino me sabse zyada pasand ki jati hai, jo ek light aur energy-boosting vrat (fasting) dish hai sabudana khichdi. The balance of carbohydrates, protein, and healthy fats is easily digested.
π Components (for two portions)
- One cup of sabudana, or tapioca or sago pearls
- Two medium potatoes, diced and boiled
- Half a cup of roasted and coarsely crushed peanuts
- Two tablespoons of ghee (or oil)
- One or two finely chopped green chilies
- Half a teaspoon of cumin seeds (Jeera)
- Rock salt, or Sendha Namak, according to preference
- Chopped fresh coriander leaves
- One teaspoon of lemon juice
π©π³ Approach (Step by Step)
- Wash the sabudana two or three times, then soak it in water (just enough to cover it) for four to five hours or overnight. After soaking, the grains should be soft and separate.
- Base preparation involves heating ghee in a pan, adding cumin seeds, and allowing them to splutter.
- Add flavors by adding boiled potatoes and green chilies. SautΓ© for two to three minutes.
- Combine Sabudana: Include roasted peanuts, sendha namak, and soaked sabudana. On medium heat, stir gently.
- Cook the sabudana for 4 to 5 minutes, or until it is translucent. Avoid overcooking it, as this will make it sticky.
- Finish & Serve: Drizzle with lemon juice, sprinkle with coriander leaves, and serve hot.
