Masala Dosa is perhaps one of the most popular South Indian foods and is now loved all around the world, not only in India! A crispy golden dosa stuffed with a spiced potato masala, coconut chutney with hot sambhar - a true combination of taste and tradition.
🛒 Ingredients
For Dosa batter:
- 2 cups rice
- ½ cup urad dal (split black gram)
- 1 tablespoon chana dal
- 1 tablespoon fenugreek seeds
- salt to taste
- water (as needed)
For the potato masala (filling):
- 3 large potatoes (boiled, and mashed)
- 1 large onion (thinly sliced)
- 2 green chilies (chopped)
- 1 teaspoon mustard seeds
- ½ teaspoon turmeric powder
- few curry leaves
- 1 tablespoon oil
- salt to taste
👨🍳 Method
Step 1: Prepare Dosa Batter
1. Wash the rice, urad dal, chana dal, and fenugreek seeds well.
2. Soak in a bowl of water for 6-8 hours.
3. Grind the soaked ingredients to a smooth batter, adding water until you have the desired thickness.
4. Leave to ferment overnight (6-8 hours). It should be fluffy after fermentation.
Step 2: Make Potato Masala
1. Put 4-5 tbsp of cooking oil in a pan.
2. Put mustard seeds in and let them splutter.
3. Add a few curry leaves, sliced onions, and green chilies (optional) and sauté until the onions are golden brown.
4. Add turmeric powder and boiled potatoes.
5. Add salt as desired, mix, and then cook for another 2-3 minutes.
Step 3: Cook the Dosa
1. Heat a non-stick or cast-iron tawa (griddle).
2. Pour 1 ladle of dosa batter on the tawa and spread the batter into a circle, as thin as possible.
3. Pour some oil around the edges and wait until crispy golden.
4. Put 2-3 tbsp of the potato masala in the middle of the dosa, fold, and eat hot.
